This is so light and fresh! It makes a change from the usual burgers and sausages on the barbecue.
Ingredients: For 2 people
- 2 salmon fillets
- 2 tablespoons olive oil or sunflower oil
- 1 teaspoon dried dill
- Salt and pepper
- Lemon to garnish.
Method:
1. Coat the salmon fillets on all surface with the oil, dill, salt and pepper. Keep aside in the fridge until ready to cook.

2. On a medium to low heat on the barbecue place the salmon fillets skin side down first and cook for about 5-6 minutes. Then turn over and cook for a further 2-3 minutes.

3. It’s ready! I served mine very plainly with couscous tossed in an olive oil and lemon dressing.
